Authentic Spaghetti and Meatballs
Participants begin by preparing the sugo (sauce)… hand-crushing imported San Marzano tomatoes, chopping the onions, garlic, fennel, and parsley, then simmering in extra-virgin olive oil. Three select meats are ground, spices added and each participant rolls their own meatballs (it’s always fun to see the different shapes and sizes!). Various pasta shapes are boiled while the salad and homemade dressing is prepared. Fresh garlic bread fills the kitchen with an irresistible aroma…mission accomplished!
Homemade
Sicilian Pizza from scratch.
Participants
feed the yeast, proof the dough, knead the dough, hand-roll the
dough, throw and spin it in the air (always fun), prepare all
the toppings from fresh veggies to Italian sausage, make the
sauce and bake the pizza in our 1940’s Middleby-Marshall
pizza oven.

Chicken
and/or Eggplant Parmigiana
Participants
first prepare the sugo infused with Papa Lena’s Red Pepper
Chips; clean, season, and flour the chicken (or eggplant); prepare
the egg wash; coat with seasoned fresh breadcrumbs, assemble,
then bake the Parmigiana with mozzarella and Romano cheeses.
Meanwhile, the salad and homemade dressing is prepared. Choose
from pasta or garlic bread as an accompaniment.
