Authentic Italian Cold Pasta Salad Recipe
with

Cold Pasta Salad from Papa Lena                     

(We urge you to buy the freshest, finest tasting, items you can afford)            

Ingredients

2 lbs your favorite pasta, cooked a lil-xtra al dente

2 cups finely diced firm roma tomatoes

2 cups broccoli florets

12 oz Mild Dell'Alpe Giardiniera or your own homemade

½ cup finely diced green bell pepper

½ cup finely diced red bell pepper

½ finely chopped sweet onion

1 finely chopped fresh fennel AKA (Sweet Anise)

¼ cup small capers

3 carrots coarsely shredded

Authentic Italian Cold Pasta Salad Recipe from Papa Lena's Healthy Foods

1 order of Papa Lena’s Sweet Red Bell Pepper Chips AKA

More about Papa Lena's Healthy Gourmet Gluten Free Roasted Red Bell Pepper Snack Chips

Cheese’s  ( cut into small pieces )

1/4 cup fresh Italian Parmigiano Reggiano Cheese (Authentic Italian Parmesan)

1/4 cup fresh Italian Gorgonzola Cheese

1/4 cup fresh Italian Provolone Cheese

1/4 cup fresh Italian Fontina Cheese

Olives:  (carefully ensure your olives are pitted)

2 cups in any combinations of the following

Black Cerignola OLIVES

Kalamata OLIVES

Nyon Oil Cured OLIVES

Green Cracked OLIVES

Gaeta OLIVES

Nicoises OLIVES

Sauce:

2 tbsp of sugar

¼ cup of cold pressed extra virgin olive oil

2 tbsp balsamic vinegar

Salt and coarse ground Black Pepper to taste 

¼ tsp paprika

2 tbsp Greek oregano crushed in your palm

Preparation Process

Boil pasta al dente (still firm, but not hard). Drain and run under cold water until pasta is no longer warm. Set aside. While your pasta is boiling, in the same water blanch your broccoli to desired doneness. Chop all your veggies. Drain the Giardiniera oil into a separate bowl. Add your EVOO (extra virgin olive oil) and your balsamic vinegar. Toss altogether pour your liquid gently toss once again and chill well. Serve cold.
