Mini Calabrese Pizza Appetizer
Hi this is Danny, and I am coming to you from the kitchen at Papa Lena’s.
Try this crowd pleasing appetizer: Mini Calabrese Pizzas.

No, not the heavy-I'm-stuffed-and-can't-eat-any-more type of first course.

You can easily make this light, delicious, hand-held party food that let's people talk and interact and still have an appetite for your food feast.

It is totally up to you to add just that right touch of garlic, toppings or spices.

After all who knows your guests better than you?

Assemble your little epicurean works of art the night
before and refrigerate.

Start with your favorite from scratch pizza dough recipe
or purchase a good "thaw and prepare" dough from the frozen food section (Trader Joe's has pre-made refrigerated pizza doughs that are excellent.)
Crush 3 or 4 cloves of fresh garlic place into a bowl.
Add 1 cup of cold pressed extra virgin olive oil.
Stir in 1 tsp of course ground black pepper.


Roll the dough really thin. Cut into
3 to 4 inch circles using a wide mouth
jar or pastry bowl as your cutout. 


Using a mandolin or sharp knife to slice a fresh fennel (Sweet Anise) then place a few slices on each dough, add a little more black pepper / garlic olive oil.


Pinch on 3 small 1 inch pieces of creamy Fontina cheese. Add your oregano and sea salt to taste.

Using a spoon, drizzle a small amount of garlic/black pepper olive oil onto each dough.


This is just a taste teaser, so go all-out and get a really good proscuttio, coppacola or aged Italian salami sliced very thin. Add just a couple of pieces on each.

Try crushing Papa Lena's Red Bell Pepper Chips on top too!

Brush cookie sheet with olive oil and bake at a high heat (pre-heated 450 degree oven) for 10 mins. or until bottom is golden brown and cheese is melted. Serve
immediately with a nice red wine.

The last thing to do is sprinkle on an imported Italian Pecorino Romano or Parmigiano Reggiano cheese. Mmmm!
